What to do With Those Hard-Boiled Eggs!

Does anyone else still have two dozen hard-boiled eggs staring them in the face every time they open the fridge??

(That’s what we get for indulging in pagan rituals, I suppose.)
 

Hee hee.  I kid.  I love that somehow dying eggs on Saturday night suddenly helps build the excitement for a Sunday Resurrection Celebration……

and boy, did we ever celebrate!!  Woo-Hoo!!!
 

But back to the reality that I have a gazillion eggs in my fridge that I can’t stand the thought of throwing away…..

I did a little “looking,” and it appears the general consensus is that we have ONE WEEK to use those little darlins’……
 

So yesterday, we had the obvious choice for lunch….

Fancy Schmancy CHICKEN SALAD!!  Made better by the fact that my Mr. Wonderful just got a LOAD of half price chicken from “The Box” the other day…..

I’m afraid I would rather throw them away than let it come to that.

    I remember when I moved down south 3 years ago. The further south I got I started seeing these huge glass jars and the liquid was red. they either contained – pickled pigs’ feet or pickled eggs. GROSS! They were everywhere, especially as gas stations. Who EATS this stuff? LOL

    making that shell soft enough that you could put the egg in a bottle whole was SO cool when I was a kid. Then it gets hard again and all your friends are amazed!

    I didn’t see you mention “Give them to the LaPlante kids” as an option! We have gone through a dozen since Sunday and finished the last 2 today. Now what will I give them when they want a quick snack? 😉

      AHEM…. We love them too. Rick and I have been eating them for breakfast and lunch plus snacks. We chose not to do eggs this year. Our sons family gave us theirs but… they will not last long. Any extra eggs would be a treat! I will even share with the “LaPlante girls” BTW – I love egg salad. I need to get more Miracle Whip.
